Lemon Ice Box Cake

Oh my goodness, I tried a new recipe the other day and it is so good especially in this Mississippi heat. I usually try recipes that are low in fat and sugar, ones that are calorie conscious; however, this is not one of those. Maybe that is why I thought it was soooooo good. About 1/4 of the cake was left when Annacarmie had to go to the hospital. Knowing it would not be good when she came home, Neil decided to clean out my refrigerator and throw food away. Throwing the lemon ice box cake away was not an option. He took it home with him thus allowing he and the girls to finish off the cake. Oh by the way, the same time he was cleaning the ref Lexi found watermelon and decided to take that home also. She loves watermelon. Any time she comes to the house and I have watermelon or cantaloupe, cut up or not, she has to have some. That child loves watermelon. Lexi, baby that is ok. You can take watermelon home with you from Mamma Kim's anytime you want.

Now, for those of you that like to try new things give this recipe a try and let me know what you think.

Lemon Ice Box Cake

1 box white cake mix
Mix according to directions on package. Bake in three layers.

Mix 2 cans eagle brand milk
1/2-3/4 c lemon juice

Reserve 1 c of mixture to be used as icing for cake. Use remaining mixture for filling between layers of cake. After using filling as icing between layers spread cool whip on top of mix between layers. Mix reserved 1 c mixture with Cool Whip and ice cake. Refrigerate.
