Oven Fried Chicken Tenders

This recipe is an easy recipe from Weight Watcher's that is really good. I have made it many times when I had people over for dinner. There are always comments about how they liked it. No one can believe it is a Weight Watcher's recipe. A serving size is 3 chicken tenders for a total of 6 points. I never eat 3 tenders; therefore, I cut the breasts into three equal portions and count each as 2 points. Hope that helps.

1 pound chicken breast cut into tenders or 1 pound of chicken tenders
1/2 c buttermilk (1 %)
1 1/2 cups reduced fat cheese nips, crushed
3/4 teaspoon creole seasoning--can use a little more for a spicier taste
cooking spray

Preheat oven to 450 degrees.
Combine buttermilk and chicken in a shallow bowl. Place crackers and creole seasoning in a zip lock bag. Crush crackers to a fine powder with a rolling pin.
Drain chicken, discarding buttermilk. Add chicken to crushed crackers and shake to coat well.
Coat a baking sheet with cooking spray. Place chicken on baking sheet, reduce heat to 400 degrees and bake for 10 minutes. Turn chicken over and bake an additional 3 minutes until chicken is done.

Let me know what you think about this recipe.
