Yum we ate something new

Girls, these are the rest of the recipes I used for dinner the other night. Sorry I am so long in getting them posted. I must not be managing my time very well lately. Maybe it is just the fact that there are too many demands on m y time. I do not seem to know how to say No or let some things go. Everything I do seems so very important to me. I guess that means some things will not get done in as timely a manner as I would like.

Here they are. The first one is a Weight Watchers recipe for Lemon Bars. The recipe makes 24 bars and each bar has a point value of 3.

Lemon Bars
1 1/3 c all purpose flour
5 Tbsp packed light brown sugar
8 Tbsp unsalted butter, cold and cut into pieces
4 large eggs
1/2 tsp vanilla
1 1/2 c powdered sugar, divided
3/4 c lemon juice
2 tsp lemon zest

Pre-heat oven to 350 F.
To make crust, mix flour and brown sugar until fluffy. Add butter and mix until a course and crumbly texture. Pour in a 9 X 13 pan and press evenly into the bottom of the pan. Bake for 20 minutes or until golden brown.

Meanwhile, to make lemon topping, beat eggs until blended add vanilla and 3/4 c powdered sugar; mix well. Add lemon juice and remaining powdered sugar and stir until completely dissolved then add lemon zest.

As soon as crust is finished, remove from oven and reduce oven temperature to 300 f. Pour lemon mixture over HOT crust and return to oven. Bake completely about 30 minutes. Cool and cut into bars.

***I did not use the lemon zest and the lemon flavor was still very tart. Probably next time I will reduce the amount of lemon juice to 1/2 cup.

***The crust must be hot when you pour on the lemon mixture.

Marinated Kabobs

1--8 ounce can tidbit pineapple, unsweet-- drain
1 T Olive Oil
2 T Soy sauce
1/8 t garlic
1/8 t ginger


Mix together pineapple juice, olive oil, soy sauce, garlic and ginger. Add chicken or shrimp to the marinade and marinade for 1-4 hours. To make your kabobs I used onions, bell peppers, pineapple, tomatoes, and chicken or shrimp. Alternate on the skewers then place on the grill. Cook chicken 3-4 minutes on each side. The shrimp will take only 2-3 minutes per side. These are good served with a brown rice and a nice green salad.
